Lai Ping Peonia Fong (Ping) July 28, 1953 – November 14, 2015. She was born in Hong Kong. The Fong family migrated to the United States in 1965. They settled in Pueblo and successfully established 'The Golden Dragon' and other successful Chinese restaurants. Lai Ping always enjoyed the restaurant industry and continued to work in many throughout her life. Ping's other passions were knitting/crochet, baking, and taking in needy animals. Ping was very proud of daughter, Connie Ya Suen Chow, who is also heavily involved in animal rescue and has devoted her life to education. Lai Ping was preceded in death by her mother and brother, Oi Yuet and Chik Fo 'Jake' (Mildred) Lai Ping is survived by her daughter, Connie Ya Suen Chow; father, Yok Limb; siblings, Chik Keung 'Kenny' (Mary), Chik Hon 'Hon' (Min Wen Wang), Chik Hing 'Ernie' (Susan), Lai Har (Lew Andrew); nieces and nephews, Ross Kattnig (Amanda), Cynthia Kazen (Gary), Peter Fong, Troy Fong, Tommy Fong, David Fong, and Ryan Fong. She was especially touched by her great nieces and nephews and was happy to have them keep her busy. Tyler and Tiffany Kazen, Araeli, Adrian, Aura and Amila Kattnig. We also want to give thanks to Ping's extended family from Applebee's, Jen, Todd, & Robin and teams, Olive Garden, Will Sandoval and team. In lieu of flowers, the family is requesting donations to Los Pobres, 212 E. US Hwy 50, Avondale, CO 81022. Special thanks to: Laura Hernandez C.N.A, Pete Gonzales S.R.D.A, Nohela Alvarez, Lily Lu, Alexandria Torrez, Dr. Shirley Salvator, Dr. Frank Settipani, Ross, Amanda, Araeli, Adrian, Aura and Amila for making it possible for Ping to live at home with her family.   1. I so enjoyed Ping and Lai Har when the had the restuarant at 7th and Main. My family at there at least once a month. They especially made sure my son had his chicken.. I am so sorry to hear that Ping was sick and passed away. My condolences to the whole family… Jane Patterson Urenda, and Sean Urenda and family.
